Yellow Baby Carrots
Carrots come in a wide variety of shapes, sizes, and colors too. I just tried yellow baby carrots for the first time and was quite surprised with the flavor. I immediately noticed they were less bitter than the regular orange carrots, but also noticably lacked a depth of flavor. In fact, yellow carrots could be best described as a watered-down version of their orange counterparts, but their faint flavor and rustic tinge did yield some satisfaction; the mild sweetness combined with the pleasant crunch made an altogether delightful snack. My only question was whether the lack of color and flavor meant an absence of nutrition as well. Upon careful research, I have learned they harbor as much beta-carotene that supports good eye health as their cousins. I am quite content with the findings, and all that remains is to find a superb baby yellow carrot recipe to share with you all.
